Harvested by hand into 15kilo boxes. Fermented at controlled temperature in stainless steel: 2 weeks with 2 pump overs per day (one open vat and the other closed) at 22ºC. Malolactic in Stainless Steel tanks. Rack off and stored in SS for 5 months for a gentle static clarification. Then racked to French oak 225l. barriques for 12 months of élevage.
This Mencia is lighter in style, although the colour belie this with its garnet rim and complex aromas and minerality, truly representing its origins in granitic soils
